Monday Menu Planning






I was at Target and picked up a nice Turkey...I love the holidays! So, I am planning on placing it in the crock pot tomorrow and having Turkey for most of the week!










Monday - Pork with an orange glaze sauce, sauteed mushrooms and rice.
Tuesday - Turkey, baked Sweet potatoes and green beans.
Wednesday - Turkey Pot Pie and corn bread
Thursday - Turkey Wraps and a salad
Friday - Grilling burgers and potato wedges.

Monday Menu Planning

I hope you had a great weekend!  We had such lovely weather in our area that is was almost impossible not to have a wonderful time.  We did a lot of yard work on Saturday and spent the day with friends on Sunday ... the wonderful thing is that the weather is cooling down (yeah...we are sleeping with open windows and how lovely to get a cool breeze!)...and I do recognize that {cooling} down is a matter of perspective...I did grow up in Maryland so I remember the really chilly October nights :)

Since the weather was cool my hubby made some yummy chili to take to our friends house and I loved it so we are certainly having it again this week!  And we took advantage of the amazing Mueller's pasta sale.  They are currently BOGO at Publix and with the $2 off of 5 coupon they work out to be 31 cents a piece! This coupon is no longer available on the Mueller's site. So...pasta in the menu this week and some for the stockpile and some for $5 Frugal Fridays for Others contribution for the week.




Monday - Grilled chicken and Penne pasta

Tuesday- Pasta and meatballs hubby made a special request

Wednesday - Chili

Thursday - Empanadas - I will be posting a video on how to make these tomorrow.

Friday - Home-made pizza

Monday Menu Planning


My menu plan is pretty simple for the week.  I think it comes from the fact that the entire family is under the weather...at the same time we will be using up items from our pantry so that will be nice on the {budget}.

Next week you are going to see a big change in my menu planning.  I wanted to start this week but frankly...convenience won this week....one of the things I have noticed in looking back on my menu's is that we eat a lot of carbs and need to eat more veggies....so this is going to change.





Monday - Soup and sandwiches for the grown-ups. (Savvy will get leftover steak so she can get some protein)

Tuesday - Kraft Homestyle Macaroni and Cheese (it is BOGO this week at Publix..and Kraft First Taste mailed us coupons to boot!)

Wednesday - Chicken and Rice

Thursday - Chicken Enchilladas

Friday - Tator Tot casserole

Monday Menu Planning




Monday - Chicken Chow Mein and a salad. (I will fess up..it is a store bought mix..I just add the chicken...it is in my pantry and I want to use it up...so an easy peasy dinner for me tonight).

Tuesday - Turkey Dinner...yup...I am in the mood for the holidays so I am making Turkey with stuffing and sweet potatoes and an apple pie...so looking forward to this!

Wednesday - Well you know we are going to be having leftovers...isn't that the best thing about the holidays?!

Thursday - Turkey Pot Pie

Friday - Since I am sure we will be tired of my "holiday themed week" :)  I am going to make something completely different. We are going to grill out and have some burgers, grilled pineapple with yuca fries (these are so easy to make but you can buy then ready to fry in the freezer section...the more {frugal} way to prepare them is simply to purchase the yucca and clean it up .. just like a potato, cut it into pieces (like steak fries) and fry them up.  They are delicious!  A little ketchup for Savvy and garlic sauce for Super Papi and me....and we have a yummy easy meal!)

Menu Planning Monday...Okay...{Tuesday} this Week :)

I had plans to do a lot of cooking and freezing this weekend but that did not happen.  Savvy was sick and Super Papi threw his back out...I keep telling Savvy that Papi is an antique and should be handled with care...but she is 3 and she believes he is Super Papi and so does HE..so was hurting this weekend.  I have to tell ya at one point I thought..this wasn't what I planned but then I remember all I wanted was Normal and that is what I got.

A kid with boogies a 40+ year old hubby with his backed thrown out (but still mowed the grass...he is Super Papi) and although we did have a nice conversation with our amazing pediatrician..we were home!  3 years ago this same weekend Savvy was hospitalized and had such trouble breathing because she had fluid taking over her body (ascites) ... so I had a {Boogie filled} normal weekend...Burgers on the grill on Labor Day and all...and you know what..that is just great with me.  I am going to have to plan to freeze some meals another weekend because I owe Savvy a trip to the beach...so fingers crossed for next weekend!

Okay so that had nothing to do with menu planning!  Except for it was a VERY round about way of sharing that I watched Sandra's Money Saving Meals and love it...I have a lot of respect for Sandra Lee and her advocacy for helping feed others...I respect that she has made a success of herself and yet continues to give back because she remembers.  I love the ideas I got from her show so this week I am going to work on her {Money Saving} recipes from Sandra Lee!

Monday - We did burgers and potatoes on the grill with some grilled pineapple...yummy!

Tuesday - Chicken Fried Steak with green beans and sweet potato

Wednesday - Stuffed Chicken thighs with Smashed Potatoes and a side salad

Thursday - Chicken Burritos with Pineapple salsa (I am saving some pineapple from Monday's meal)

Friday - I am going to make a chicken soup with the leftovers I have...Everything but the Kitchen Sink Soup...pretty much using up all of my leftovers and making a soup from it...and some corn bread.

Monday Menu Planning

I want to work on eating from the pantry this week.  So I am going to focus our meals on items we already have in the freezer frozen.  This may sound odd but I want to clean out our freezer so I can freeze some meals next weekend ... I want to pre-plan some meals for us to make in bulk and freeze for future dinners.  I am thinking this will be an even better way to save money with our groceries.  So, in my freezer I currently have bacon, chicken, ground beef,  and ropa vieja (yup...we made a lot), turkey sausage and should I count my ice cream?!


Monday -  Chicken Fajitas and grilled corn

Tuesday - Pot Stickers...I am going to combine two recipes.  I will be attempting my own dough and following the dough recipe from HERE and the filling recipe from HERE.


Wednesday - Oven Fried Panko Chicken  (I will be substituting the butter with margarine due to my daughter's dairy allergy) and rice.

Thursday - Pasta with a turkey sausage sauce


Friday - Chicken wrapped bacon and potato wedges

Monday Menu Planning {Kinda}

I would Love to know what you all are planning for dinner this week...I am having leftover galore!  We made a ton of Ropa Vieja for my hubby's {fiesta} on Saturday and even though I sent everyone I could catch with a plate full of food we still have a ton of food leftover...and you know I can't just let it go to waste...so this week...we are having Ropa Vieja a few nights (which we love) and Sloppy Jose's one night (this is what my hubby calls Ropa Vieja on a hamburger bun) and salads...so I didn't plan a menu because we spent our weekly food budget on the party so we are going to enjoy the leftovers...

If you have a chance please share a recipe that you are preparing this week...I would LOVE ideas of recipes to serve my family next week....oh..and if you want the Ropa Vieja recipe just look at the post below...we made it on the stove top but you can easily make it in a crock pot too!
